Magic iron frying pan (made from KUROKAWA steel) 

We have started a crowdfunding campaign for the “Iron Claw” the ideal frying pan, made in Japan, that is non-stick, light, easy to clean and handle!

Iron Claw will be your cooking utensils for life!

 

From Higashi-Osaka, Japan’s famous manufacturing town, we have developed the ideal iron frying pan that can be used for grilling, frying, and deep-frying, all in one light and easy-to-handle pan. The hard tempered finish prevents food from burning and reduces the need for cleaning.

Ⅰ. Why call “magic” ?   

Reason 1. Made of iron, but light

Everyone knows that Iron frying pans are great! But many also feel that they are often too heavy to handle. But with an iron thickness of 1.6 mm, the “Iron Claw” weighs only 2.05 lbs (about 930 kg)! This is 20 % lighter than the other similarly sized iron pans. It’s easy to handle, so you can use it for everyday cooking without worrying.

This is a unique technology created in Japan, a manufacturing powerhouse, which is rarely used overseas. By stretching the sides until thin, we have succeeded in reducing the weight by 20%. The disadvantages of conventional iron frying pans, which are heavy and difficult to handle, have been greatly reduced.

 

Reason 2. KUROKAWA steel(黒皮鉄) looks nice and functional 

Kurokawa steel(黒皮鉄) iron is a material that becomes easier to use the longer you cook and its appearance can be enjoyed as it changes over time. It is even eye-catching when taken outdoors. You can also use as a camp cooker.

Kurokawa steel iron not only looks amazing but at the same time has a spectacular performance.

Iron is the perfect material for achieving the balance needed between thermal conductivity and heat storage. When meat is grilled in chunks, it becomes tender on the inside and crispy on the outside. The inside of the meat when grilled at high temperatures is full of flavor and is very tasty. Just by using an iron pan, anyone can easily become a good cook.

What is heat capacity…

The higher the thermal conductivity of the material, the faster the pan will heat up. If you are only considering thermal conductivity, aluminum and copper have a higher thermal conductivity, but it is not enough for the temperature to rise quickly. It is also very imperative to keep the temperature at the right level when adding additional ingredients to make a delicious dish. The key to this is how much heat can be stored or, heat capacity. Using a material that can store a lot of heat makes a frying pan that does not cool down quickly when food is added. The heavier the weight, the higher the heat capacity, but the thicker the material, the more difficult the pan is to handle.

We tested the heat storage properties. As time passes, the regular frying pan gets cooler and cooler, but in comparison the IRON CLAW stays hotter longer.

Reason 3. Resistant to rust

Did you know that there are actually many different types of iron frying pans?

KUROKAWA steel is an iron material that is made from a process that produces an oxide film on the surface of the iron, rendering it black and resistant to rust. As you use it, the oil and heat will form a perfect coating, making it a wonderful non-stick tool.

Iron is a material that allows food to be cooked without burning because the bumps of the oxide film on the surface blend well with oil. The more you use iron pans, the more they become accustomed to oil, which makes them easier to use. However, it is generally said that iron pans need to be oiled after each use to prevent red rust. Many people find it troublesome to have to do this every time they use it.

In order to eliminate the initial difficulty of using iron (rusting and sticking), a “Hard Tempering Technology” is applied. The body of the product is heated (at about 700℃) until it turns bright red, and then immersed in olive oil, so that it is already baked with the oil from the time of delivery. Therefore, there is no need for “bake blind” and “oil preparation” (call seasoning process) as there is no rust-proof coating like “clear coating”. When you receive the frying pan, just wash and use right away.

Hard tempering process takes a lot of time and effort to do this by hand, but each pan is carefully finished by a craftsman who wants you to enjoy cooking with iron pans that are rustproof and non-stick from the first day you use them.

Reason 4. Induction-safe 

Do you think that iron frying pans are not compatible with induction cookers? That is not true. It is compatible with all heat sources (except microwave ovens), including induction cooktops, so it can be used in all-electric homes.

Reason 5. High intake of iron 

If you are not feeling well for some reason, it is most likely due to iron deficiency. The human body wants to take iron. another feature of KUROKAWA steel iron is that it is a natural source of iron. One of the reasons why iron frying pans are so popular is that iron can be naturally ingested through daily cooking. Iron, which tends to be in short supply if not taken consciously, is great for children and women in particular.

 Ⅱ. Handle Selection 

Being able to choose from three different colors for the handle is very nice. You can choose the one you like best, for example, to match the color with other cookware.

Frying pans made of KUROKAWA steel iron have good thermal conductivity, so the surface temperature rises easily, and cooking at a high temperature makes the food fluffy.

Another advantage is that it can be used to cook stir-fries at a high temperature, allowing you to quickly finish them while releasing the moisture. As the excess water in the food is burned off, I think the result is an authentic finish even at home.

Since it is induction compatible, the heat can be easily adjusted by switching to induction for cooking that requires simmering. I feel that this frying pan can be used for a wide range of purposes.

I use it every day in my restaurant, and it is sturdy and more economical than buying new ones over and over again. Unlike conventional iron pans, it does not require any special care and is very easy to clean up, which makes it very useful.

 

Ⅳ. Cook and Care

Usage Instructions

  • Heat it until it smokes. Do this every time. When it starts to smoke, turn off the heat.
  • Once the heat is off, add the appropriate amount of oil and turn the pan slightly to blend it over the surface.
  • Once the oil is blended, turn on the heat and add the food.
  • It is better to use a lower heat level than standard Teflon for the first time.

Care Instructions

  • When you are done cooking, wash the pan when it is slightly cool.
  • Don’t use any detergent.
  • Wash it with lukewarm water using a sponge with a rough surface.
  • If you didn’t burn the food when cooking, most of the food remnants will come off easily at this point.
  • After removing food remnants, heat it to remove the water. (If you just wipe it with a cloth, the moisture will remain and it will rust.
  • If it is a frying pan that you can use every day, you don’t need to oil at the end of each use.
