 To make Tsukemono, you need to first drain the water from the vegetables and make a bacteria-free environment for the vegetables by using salt. Preservation power improves by salt entering the vegetable fiber, and the number of lactic acid bacteria increases, and the sourness of the pickle is produced. Easy as that, now you have Japanese style pickles.

 By applying pressure vertically to a cylindrical glass pot, the speed at which water is drained from the vegetables increases, and this is how the pickles get their unique texture!

Our mission

How can we ensure that not only Japanese people but also people from other countries enjoy pickles?There are two problems that need to be solved.

The first is that after you receive the product, you do not have the ingredients on hand.

Japanese pickles require salt, Konbu, and dried red chili.But we learned that getting Konbu outside of Japan was much harder than we imagined.

Of course, it is possible to make pickles with just salt, but we wanted people to enjoy more traditional pickles, so we decided to include the Picklestone starter kit.

With this, all you need to do is prepare the vegetables you have at home and you can start making pickles right away the day you receive them.

The second challenge is that many people are not familiar with the taste of Japanese pickles, so the person making the pickles cannot judge whether the taste of the pickles made according to the recipe is correct or not.

 

For those who are making pickles for the first time, we decided to develop a perfect original soy sauce that is much easier to use. All you have to do is put soy sauce into the pot with the vegetables. There is no risk of failure.

We developed our own original blend of soy sauce.

The added flavor of the shiitake mushrooms changes the taste of the pickles for the better.It is also free of animal ingredients, so it can be eaten by vegans.
