The best fried chicken, soft serve ice cream and cocktails you’ll ever have

Story

Hey dudes. May I introduce to you Mollis, the second, well hopefully second venture by me, Alex Bond of Michelin starred Alchemilla in Nottingham. I know it doesn’t look like much but just hear me out. Mollis is a completely different concept to Alchemilla, giving me the chance to do something brand new that combines my other loves outside of fine dining: Hip hop, fried chicken, ice cream and graffiti. Nottingham is a city of independents with an ever growing food scene; I believe we can and will only add to that. We really want to turn this run down, non-descript, kind of sad looking building into something really special to bring people and communities together under on roof with one love. So as well as a restaurant we are creating a gallery space to exhibit local artists talents and I need your help.

Now I know it doesn’t look like much or look like we have done much but trust me when I say we are nearly there. Alchemilla looked loads worse than this only a couple of weeks before we opened.

So what’s the concept? Why should we care? Think next level chicken with flavour combos you’ve never seen, the juiciest chicken, the crustiest crust. Fresh vibrant side orders that aren’t just fries and coleslaw, obviously we will have fries as they are ace but loads of other cool stuff as well. Of course something amazing for the veges too. Then there’s the soft serve ice cream using high quality produce, foraged ingredients and some flavours we guarantee you’ve never seen. The best cocktails in the city, maybe the world (so we think). Our bar team – lead by world class bar tender winner Daniel Warren – are composing a drinks list that’s both fun and inventive. Expect classic party drinks like Margaritas and Pina Coladas but not as you know them, through to toasted hay butter washed old fashioned, or English single malt, toasted banana, sourdough caramel and blackened garlic.

All of this deliciousness served up to a backdrop of classic hip hop bangers, old stool rap, trip hop, garage and everything in between.

What’s the space gonna look like Alex I hear you ask? Well I’m glad you asked. My other love as a hip hop kid growing up was graffiti (Obviously). We have put together the most incredible team of artists, including Nottingham royalty Dilk, Kid 30 and Boaster to work their magic. The space is gonna look nuts. I can’t wait to see it come to life. check out some of their amazing work below.

So why are we here on Indiegogo? Why do I need your help? I was super lucky to snap up the Chinese restaurant right next door to Alchemilla and have been working tirelessly for the last 18 months to get the project off the ground. This unfortunately tied us up in red tape for a long time but the build has been going really well and we are on target for a November opening. Due to some unforeseeable setbacks, mostly structural issues with the building we have had to mend, our budget has taken a hit. When we removed a ceiling we realised we had to fully repair the whole roof  amongst other structural problems that were hidden behind walls. However with that said we are very close to getting over the line but without your support we won’t be able to realise our goal. Can you help??

Risks and challenges

Obviously all build projects come with some common potential risks but we feel we have identified all of those as we have completely gutted the place and found all there is to find from hidden dodgy wiring to this roof, hence the budget going a little off piste. We are on the final stretch now and have all our ducks in a row and are ultra confident with your help we cam deliver on our promises and create something super cool.
